Looking back at the past 20 years, we can conclude that cheese making equipment design and construction have been subject to considerable change. Besides changes in cheese shape and ripening method, the equipment also underwent changes under the influence of capacity increase and various new regulations.

From the start KLOKSLAG has taken a leading role in these developments. One can’t imagine a modern cheese dairy without closed CIP-cleanable cheese presses, automatic cheese mould washing machines or CIP-cleanable conveyors, all products for which KLOKSLAG set the trend. Equipment controlled by modern PLC-based control systems, with themes like HMI, safety and tracking & tracing built custom-made by KLOKSLAG Automation.

In the brining process lots of changes have taken place as well. As the amount of cheese from the production increased, automating the brining process became more important. In addition authorities have intensified their demands for quality assurance and food safety. All this has led to increased attention for the quality of brining systems.

Brine cages with large and small capacity, depending on the requested maximum difference in brining time, circulation methods for transporting cheese in brine, automatic overhead cranes to hoist brine cages, solutions for bacteriological optimization of brine and automation concepts for tracking & tracing. Items developed by KLOKSLAG which helped to bring cheese dairies to a higher level.

Beside the aforementioned systems KLOKSLAG has been committed to developing draining and moulding equipment for cheese production. The Conomatic already has proven to be successful in various cheese dairies. Our aim is to keep on developing and promoting this machine.

In future KLOKSLAG will continue to come up with new solutions and systems for cheese dairies. At the moment a new group of young employees is being trained to continue this job. They will represent the KLOKSLAG as usual: always looking for possible customer-specific solutions or improvements.
