Deep brining

Deep brining systems are the most used systems in cheese dairies. The cheeses are transported into brine cages through flow channels. After that the brine cage is placed into the brine bath by means of an overhead crane.

The brine bath can be equipped with a circulation system, which comprises of brine and a circulation pump.

Free floating
Cheeses freely float in and out the brine cages. Feed and discharge of cheese through flow channels.

Fixed positions
Cheeses are positioned in rows so that the position of each cheese is fixed. Feed and discharge of cheese through flow channels.
